Menu Planning Monday- Week 2

Hope everyone enjoyed their weekend;) We are all home again with yet another snow day. At least my hubby is home from work, that always makes snow days nicer! It is the never ending winter over here in Virginia. When I was planning my meals for the week, I originally wrote down like 4 soup recipes. Looking back over it again, I decided I needed a little more variety even if I’m cold!

Here is my tentative menu for the week:

Breakfasts:

Overnight Cookie Bowl Oatmeal (E)- p. 232 (I like to eat this reheated bc I prefer my oatmeal warm;)

Savory Protein Muffins (S)- p. 221

French Toast (E) w/ berry syrup- p. 239

Trim Healthy Pancakes (E)- p. 223

Lunches:

Crispy Salmon (S) and a green salad- p. 283

Just Like Campbell’s Tomato Soup (S) p. 292  and Joseph’s crackers- p. 394

Chicken Salad

Leftover Pizza, Curry, Soup, Meatloaf

Dinners:

Spaghetti Bolognese w/ Zucchini Noodles (S)- p. 350

Mexican Meatloaf (S)- p. 317

Chicken Cordon Bleu (S)

Chicken Curry (S)

Fooled Ya Pizza (S)- p. 277

Creamy Chicken and Spinach Soup (S)

Pumpkin Waffles (S)

Snacks:

Cottage Cheese Sundae- Cottage cheese, w/ sliced strawberries, a squirt of reddi whip and slivered almonds on top

Joseph’s pita crackers w/ cottage cheese and salsa

Greek Yogurt and Homemade Granola

PB/ Celery

Desserts:

brownie batter bites (S)

chocolate chip cookies (S)

skinny chocolate (S)

cheesecake in a mug (S)

Reeses Eggs or Pumpkin PB cups (S)

*I like to eat at least 1 E meal/ day and try to have only 1-2 desserts;)
