I love to spread butter on a low carb tortilla or Joseph’s lavash bread, and stuff it with mozarella cheese, grilled chicken, tomatoes, and fresh basil or pesto and then grill it in my panini press:)- S
Here is an official recipe, but of course for THM eating you can replace the ciabatta bread with a Joseph’s lavash bread or low carb tortilla folded in half.
Chicken Caprese Panini
We love this on pasta night, which is usually Mondays. I add red, yellow, and orange bell peppers to mine (we call these stoplight peppers), and sometimes add cream cheese and heavy whipping cream to make it more creamy;) I’ve also made this with pesto sauce, homemade, or from Trader Joe’s. Anyway you have it, who doesn’t love pasta night?
