Happy Halloween! new Pumpkin Cookie Recipe- S

My mom is in her THM test kitchen once again! Here are some fabulous pumpkin cookies just in time for Halloween and Thanksgiving ;)

Pumpkin Cookie Recipe- S
Recipe type: Dessert
  • ½ c. pumpkin
  • 1 egg
  • ¼ c. soft butter
  • Sweetener (I used ¼ c. Truvia)
  • 1 tsp. vanilla
  • ½ tsp. almond extract
  • ¼ c. almond flour
  • 1 heaping T. coc flour
  • 1 hpg T. shredded coconut
  • 3 hpg T. peanut flour
  • 1 tsp. baking powder
  • ¾ tsp. gluccie
  • pinch of salt
  • ½ tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • ½ 85% dark chocolate bar chopped into pieces
  1. By hand, mix wet, mix dry, and then combine
  2. Drop onto greased baking sheet and bake @ 350 for 10 min
  3. Let rest for 3 min. on sheet, then place on rack to cool
  4. Makes 20 cookies


Fun Friday- Cheesecake Brownies- S

Hello Fellow THMers!!! I hope everyone is having a fabulous, healthy, happy week ;) It was National Cheesecake day, and I was in the mood for cheesecake AND brownies, so I combined them and got this final product which I’m pretty thrilled with ;)


Here’s the recipe:

Cheesecake Brownies- S
Recipe type: dessert
  • 1 stick of butter (melted)
  • ¾ c. of your favorite sweetener (I used a mix of erythritol and xylitol- use about ½ of that amount if using the THM sweet blend, I have also used ½ c. truvia which works well)
  • 2 eggs, beaten
  • 1 T. almond milk
  • ½ c. pumpkin
  • ½ t. vanilla
  • ½ t. caramel extract
  • ⅓ c. cocoa
  • ½ c. almond flour
  • ¼ t. baking powder
  • ¼ t. salt
  • 1 block of ⅓ fat cream cheese + 2 T. sweetener
  1. Cream the sweetener, eggs, and butter together
  2. Add in remaining wet ingredients (not the cream cheese)
  3. Add in the dry ingredients
  4. Pour mixture into a 8 x 8 greased pan
  5. Using a mixer or fork, mix the cream cheese with the 2 T. sweetener
  6. Spoon cream cheese mixture into a baggie
  7. Cut a hole in the tip of the baggie and pipe the cream cheese onto the brownie mixture
  8. This will not look pretty!!!! But don't worry it will turn out ;)
  9. Use a knife to swirl the cream cheese into the brownie
  10. Bake @ 350 for 45-50 min. or until the center is firm
1. This is more like a brownie cake when you first take it out of the oven, which is excellent with some THM ice cream ;) But once you let it sit in the fridge overnight, they set up pretty nicely!

2. You can also make the brownies without the cream cheese mixture and you just need to bake them for 20-25 min ;)



Fabulous Friday- My favorite “G Jimmy S” (GGMS) recipes

Hello BTTW readers! I hope you are all experiencing success and enjoying your THM journeys;) I have good days and bad and I am still undergoing tests. I continue to eat THM because it’s my way of life now and I know I would be feeling worse if I didn’t.

One thing that makes me feel fabulous and gives me a pick me up is a good GGMS drink, or as my 5 year old calls it, a G Jimmy S! Here she is sipping one on 4th of July with Ariel as we watched the boys set off fireworks.  She is one of the pickiest eaters I know and she will drink my whole G Jimmy S if I let her, so if she likes them, anyone can!

My first attempt at a GGMS was the caramel apple and I didn’t like it a bit. I gave up on it for awhile until my mom came to visit and insisted I try some new flavors. We had fun mixing and matching extracts. I encourage you to find your favorite flavors because the ACV really does give you a pick me up and they are great for drinking in between meals and for getting in your water intake. Here are some of our favorites that we came up with:

Matsumoto GGMS (named after my favorite Shave Ice place in Hawaii bc it tastes just like I’m eating a shave ice there!)

2 T ACV (apple cider vinegar)

1/2 t. coconut extract

1/2 t. banana extract

1/2 t. orange extract

12-15 drops liquid stevia (My favorite brand is the Trader Joe’s brand)

Fill a large tumbler or quart jar with ice, fill with water, and then mix all ingredients. Drink with a straw. We’ve decided they just taste better this way !


Berry Cherry

2 T. ACV

1/2 tsp. strawberry extract

1/2 tsp. cherry extract

12- 15 drops liquid stevia

Repeat process above



2 T. ACV

1/2 tsp. coconut extract

1/4 tsp. lemon extract

1/4 tsp. raspberry extract

12-15 drops liquid stevia

Repeat process above


Recipes to try from other THMers (I’m sorry I don’t know the original authors to these):

Mountain Dew GGMS 

use 1/2 water and 1/2 club soda

1 packet stevia


2 T lime juice


Strawberry GGMS

In a blender add:

2 c. water


3 packets stevia

Juice from 1/2 a lemon or lime

1/2 tsp. ground ginger (I don’t use ginger but I know it’s super good for you!)

4 or 5 frozen strawberries

Handful of ice

Blend well and enjoy

Fit and Fabulous Friday- This woman is truly inspirational!

This is such an amazing story!!! It seems that as women we are just so hard on ourselves and always see the imperfections because there will always be imperfections. We cannot compare ourselves to airbrushed swimsuit cover models (these women are not real) We all have imperfections, but we need to focus on what we like about our bodies, what our bodies can do, and what we can do to improve the way we look and feel in our own skin. We do not get to choose where the fat comes off of our body or how we look after we’ve lost weight ( I still am not happy with the way my thighs look, but I like my calves and I love that my legs allow me to run and dance and play with my kids so I try and focus on that!) We CAN choose to make our bodies stronger and healthier and appreciate all of the wonderful things it can do. Read this story, it will change your life. She is beautiful inside and out!! And I’m amazed at her physical and mental strength!!

My hubby and I are off to celebrate our 1o year anniversary so I will not be posting next week. I will be on a beach with a good book and my THM snacks. I will be wearing my new tankinis that cover my problematic thighs, but emphasize the new definition in my back that I’m seeing after I’ve been diligent with my workouts and my healthy eating. I’m not going to focus on my imperfections, just on what my body can do and on what I like about my body. Have a wonderful week everybody and try this week to Love your imperfect bodies!!

I made these again this week for my E lunch with sweet potatoes and rosemary chicken and I forgot how incredibly delicious they are!!! If you haven’t tried these yet, do it this week!!! I subbed the truvia for 1/4 c. of the new THM sweet blend. Seriously, amazing ;)

Love this quote and reminder!!! You make no progress when you’re bitter because someone else is successful, so it’s important to strive to be better;) I’ve learned that no matter how much I think I’m helping others, I am in no control of what others do- their successes, failures, hurtful or helpful words,  including my own children LOL, but I CAN control how I treat my body and my mind and whether or not I strive to be better today than I was yesterday. It’s definitely nicer to live in a state of being better rather than bitter!

Fun Friday- It’s Easter time!!! Lemon Cheesecake, a fun way to fill kid’s Easter eggs with healthy treats;)

FUN RECIPE: I’m super indecisive with my Easter dessert this year. There are just so many possibilities, but I think I’m going to make this and I’ll probably put some fresh raspberries on top;)

Low-Carb Lemon Cheesecake

Lemon Cheesecake- S- Instead of a liquid sweetener, I will just use 3/4 c. of my powdered sweetener for the filling or about 10 tsp. truvia and I’ll prob just use 2 pkg. cream cheese, instead of 3 ;)

Fun Friday- Spring is in the Air! Coconut Macaroons

Spring is in the Air! It FINALLY stopped snowing over here in Virginia (we had 13 snow days since January this year, can you believe that?!) But this week we’ve had some gorgeous 67-70 degree weather! I’m loving it!!! We’ve even started seeing some flowers bloom in our front yard. Once I start seeing flowers, I automatically think about Easter. I was so excited to find this recipe for macaroons online because it is a tradition for us to make them at Easter time. I’ve got to start collecting THM friendly Easter recipes;)What are some of your favorite Easter recipes?

A fellow THMer mentioned that she loved Chocolate Covered Katie’s Coconut Crack Bars. I was intrigued and looked them up. There are only a few ingredients and they look amazing and would be fun to try out!

Coconut Crack Bars - Remember THMers to use the stevia option for your sweetener or experiment with amounts of other on plan sweeteners you use like xylitol, erythritol, or truvia;) These would also be considered a S dessert.

Fun Fact: Just Keep Swimming, just keep swimming!! Dory has it right. As long as you just keep moving towards your goal, it doesn’t matter how fast you go just as long as you are working towards it. No matter how slow you are losing, think about your weight loss journey this way: Thank you to my admin friends who posted it;)

It’s Kite Day in DC this weekend but sadly, we are going to have rain;( I was thinking of all the kind of kites we could make with the kids. I enjoyed perusing Pinterest for the best ideas. These paper kites look really cute, but we’ll probably be making something more like the paper bag or perhaps just the plastic bag kites;) 3 young kids means keeping things simple and quick! My plan was to fly them this weekend for our family activity, but maybe we’ll just make them while we watch the rain outside and play our WII dance game;) We can save our kites to fly on a sunnier day!
